instructions

  • the sear: In a cast-iron skillet, brown your meat of choice over medium-high heat until fully cooked. Remove the meat and set aside, keeping the savory juices in the pan.

  • the sauté: Add your oil if needed, then soften the onions and garlic. Toss in the greens until wilted, then stir the meat back in to combine.

  • the pour: Vigorously whisk your duck eggs with sea salt and pepper. Pour them over the mixture and let the bottom set on the stovetop for 2 minutes.

  • the bake: Slide the skillet into the oven at 375°F for 12–15 minutes until the center is set.

  • the table: Let it cool for 5 minutes. Top with fresh garden herbs before slicing.
