The M7 Super-Fuel Elk Bowl

A savory elk and duck egg fried rice bowl with jasmine and cauliflower rice, fresh garden vegetables, and a golden heritage duck egg on top.

This isn't a "light" snack—it’s high-performance fuel. This recipe uses a full pound of lean protein, perfectly portioned into four servings to carry you through a full afternoon of work, whether you're in the studio or out on the ranch.

The Components

  • The Protein: 1 lb ground Elk (Substitutes: Bison, Lean Ground Beef, or Ground Turkey).

  • The Base: 1 cup Jasmine rice (cooked) + 2 cups Cauliflower rice.

  • The Sauté: 4 cups shredded cabbage + 2 yellow bell peppers (diced).

  • The Crunch: 2 English cucumbers (thinly sliced).

  • The Liquids: Rice vinegar, fresh garlic, and ginger.

The Zesty Avocado Mix (The Crown)

Prep this fresh per serving for the best color and flavor:

  • 1/4 Avocado (mashed)

  • 1 tsp Lime juice

  • Pinch of red pepper flakes

  • Salt & Pepper to taste

Instructions

  1. The Quick-Pickle: Toss your sliced English cucumbers in a splash of rice vinegar and a pinch of salt. Set them aside—they’ll get brighter and crunchier while you cook.

  2. The Base (Fresh Cauliflower Method):

    Prep: Grate your fresh cauliflower into "rice" using a box grater or food processor.

    Sauté: Place the cauliflower rice in a dry skillet over medium-high heat. Sauté for 3–5 minutes without oil.

    Combine: Once it’s tender-crisp, fold in your cooked jasmine rice. Keep warm.

  3. The Protein Sauté: In a separate large skillet, brown the ground elk (or your chosen substitute) with garlic and ginger. Just as the meat is browned, toss in the shredded cabbage and yellow bell peppers.

  4. The Deglaze: Pour a generous splash (4–6 tbsp) of rice vinegar over the meat mixture. The steam will wilt the cabbage and pull all those savory juices into a light sauce.

  5. Assemble: Scoop 1/4 of your rice/cauliflower base into a bowl, pile on 1/4 of the warm protein and cabbage mix, add your chilled pickled cucumbers, and top it all off with the fresh zesty avocado crown.

  • Substitutions: While we prefer elk for its lean, nutrient-dense profile, Bison is a fantastic wild-game alternative. If using Lean Ground Beef or Turkey, ensure you drain any excess fat after browning to keep the "clean fuel" profile.

  • Meal Prep: This recipe is designed to fill four standard meal-prep containers. Store the avocado crown separately to keep it fresh!
