there is something uniquely satisfying about a meal that bridges the gap between the ranch and the kitchen. while a rice bowl is an incredible, quick-fix lean protein lunch as-is, sliding a fresh duck egg from the morning’s rounds right on top takes it to a whole new level. frying it directly in savory chili crisp oil adds an incredible, rich flavor and a perfectly lacy crunch. it’s honest fuel for honest work when you need to restock your tank fast after a hard morning of chores.

ingredients

the base: 1.5 to 2 cups warm jasmine rice

the protein: 1 cup shredded rotisserie chicken (warmed through)

the star: 1 fresh m7 duck egg

volume/crunch: ½ cup cucumber, diced

the greens: a generous handful of fresh arugula or spinach

the flavor: 1–2 tbsp chili crisp oil, a splash of tamari (or soy sauce), toasted sesame seeds, and coarse black pepper

instructions

  1. establish the foundation: in your favorite heavy serving bowl, lay down a generous bed of warm jasmine rice.

  2. build the volume: toss your fresh arugula or spinach and crisp diced cucumbers right on one side of the rice, and pile your warm shredded chicken high on the other.

  3. fry the egg in flavor: heat a small skillet over medium-high heat and drop your chili crisp oil straight into the pan. once it's hot and bubbling, crack your fresh duck egg directly into the chili crisp.

  4. get those lacy edges: use a spoon to scoop some of the hot, vibrant chili oil out of the pan and pour it over the egg white as it cooks. let it fry until the edges turn beautifully crispy and golden, but keep the rich yolk soft and runny.

  5. the finish: carefully slide the crispy fried egg right onto the center of your bowl. pour every last drop of the remaining hot chili oil from the skillet directly over the chicken and greens.

  6. season: finish it off with a splash of tamari, a handful of toasted sesame seeds, and a generous grind of coarse black pepper before digging in.
